Crate and Barrel's Coconut Cup Cakes.

It's Potluck Day at Gollum's http://designsbygollum.blogspot.com/. Please join us all for Foodie Friday and thanks, Gollum for hosting this event.
I usually bake cakes from scratch but when I saw the box with a delicious looking coconut cupcake at Crate and Barrel while I was visiting Chicago, I had to buy it. And am I glad I did! I baked it today and here is how it looks like.

Here is the package the mix came out of. We do not have a Crate and Barrel here but if you're lucky enough to have one in your neighborhood, I can say that the mix is worth trying. It tastes pretty good.
Thanks for coming by and thanks again, Gollum for this fun event.

  15. Christine, No wonder your cupcakes are good, your mix is from Ina Garten the Barefoot Contessa. She has a show on the Food Network. She has the recipe for her cupcakes on her website, I believe. I have a few of her cookbooks, too. I make her coconut cupcakes for Dr. K once in a while because they are his favorite. Paula Deen has a great recipe for a Coconut cake, too. Now I have to make some cupcakes - yours look so yummy! ~ Robyn
